Fresh food for the eyes: vitamins A, C, E
Carrots are probably the best-known nourishment for fresh and healthy eyes. They improve our vision because carrots contain lots of vitamin A and beta-carotene (provitamin A), which form the raw materials for the visual pigment rhodopsin. In turn, the photoreceptors in the retina need rhodopsin for the visual process.
For those who don’t like carrots, yet would like to benefit from vitamin A and carotene, can also do their eyes some good by eating turnips, spinach, or sugar melon.
